This method is suitable for patient children who love long and painstaking work. To make one module, small rectangles are used. With the help of simple steps, elements are obtained that can be fastened together. We will need white and orange modules. For the first layer we use only colored parts. We form a circle. Next, we insert three white elements and surround them with red ones. We turn all the corners up. In the next layer we add four white modules. We increase the number to five, and then go down. At the same time, we lay out colored elements, increasing their number each time. On top of the resulting white breast we attach a black nose, consisting of one piece. We lay out the outlines of the muzzle and gradually narrow the head. We extend the ears, consisting of two red and two white modules on each side. Separately, we construct the tail from thirteen orange and two white parts. Glue on the finished eyes and two legs.

  1. Fold a square sheet of orange paper in half and unfold it.

  12. Unfold both folds. Turn the middle folds in the opposite direction.
  13. Fold the bottom corners of the tail a few millimeters inward to give a natural shape and stability to the tail.

PREPARATION

Contrary to popular belief, there is absolutely no point in boiling chanterelles before frying (like most other edible mushrooms) - you will lose most of the taste and aroma, not to mention the texture. That is, chanterelles, of course, can be boiled in soup - but even in soup they taste better fried, rather than just boiled. Collected or purchased chanterelles need to be soaked in plenty of cold water for 10 minutes and then washed - they are most often quite dirty, so wiping them with a cloth is not enough. Washed mushrooms should be dried on a towel or on a wire rack for drying dishes. After this, cut off the very tips of the legs and cut or tear large burdock mushrooms into two or four pieces with your hands.

FREEZING

Attention, now there will be very important information. If you, having collected three baskets of chanterelles, prepared them in the above way, and then decided to freeze them straight away, raw, then rather abandon this idea. To do this is the same as throwing the chanterelles straight into the trash. Raw chanterelles become unbearably bitter after defrosting! But cooked ones: fried or boiled - they are not done! Before freezing, cook the chanterelles completely and then everything will be fine.

UNIVERSAL RECIPE

Here is the most versatile way to make a “base” of chanterelles, which is suitable for anything. You can then mix this “base” with pasta, add it to risotto, put it on polenta, on mashed potatoes or simply add it to roast potatoes.

Place washed and dried chanterelles in batches in a dry, well-heated frying pan over medium heat. Don't add salt!!! And do not fiddle with the chanterelles, stirring all the time. Leave them alone, just shake the pan from time to time - this will keep the mushrooms intact and beautiful. After some time, juice will begin to release from the chanterelles. It can be evaporated or drained; it is an excellent addition to sauces and soups, like a concentrated mushroom broth. As soon as the juice stops secreting, this will happen in 5-7 minutes, add olive, ghee or butter to the chanterelles along with chopped garlic. In addition to garlic, you can add chopped shallots and ginger. Don't overdo it with ginger - although it goes well with chanterelles, too much of it will kill the delicate flavor of the mushrooms. Fry chanterelles in oil over high heat, shaking the pan, until golden brown, about 7 minutes. That's it, the chanterelles are ready. It is better to salt them before adding them to the desired dish.

PASTA AND CHANTERELLE

To make pasta with chanterelles, you can try to undercook the pasta a little - if on the package, say, with tagliatelle, it says that the cooking time is 9 minutes, cook for 7. Let the pasta arrive in the pan where you fried the chanterelles, along with the chanterelles themselves and then mushroom juice that you scooped out during preparation. Plus, you can add more cream and spices - salt, freshly ground black and white pepper, turmeric, nutmeg and cinnamon on the tip of a knife.

RICE AND CHANTERELLE

Chanterelle risotto is the most economical way to use them. Just a small handful makes enough risotto for 3-4 people. In this case, do not add any more liquid; there is enough of it in the mushrooms.

CHANTERELLE WITH MEAT AND BY-PRODUCTS

Chanterelles are an excellent replacement for any other mushrooms in recipes with meat. For example, try replacing white or mushrooms in beef stroganoff with them or stuffing them into pork rolls. A special joy is chanterelles with liver, especially chicken. You can make both a hot dish (a stew with the addition of root vegetables and paprika) and a warm salad - all the same ingredients, but fried separately and laid out on a dish with a green salad mix.
